Our client, a Co. Waterford based Bar/Restaurant currently have a vacancy for a Sous Chef . This is a fantastic opportunity for an experienced Sous Chef to join a fast paced and hardworking environment with excellent opportunities for growth and personal development. The role: Ensure the highest food standards and innovation across the kitchen team. Have the ability to take new food concepts from design to full implementation. Ensure all staff are involved in the development of menus, food delivery and presentation and are trained to the highest standards and performance. Manage the day to day operations of the kitchen and ensuring that structures and procedures are followed i.e. break sheets, uniform policies, rosters, food presentation, deliveries, timesheets etc. Ensure that food hygiene standards are implemented, maintained and that all records are completed inline comply with company procedures, E.H.O, Q.A, and H.A.C.C.P requirements. Monitor expenditure and retain efficient budget control in the kitchen focusing on the key impact areas of food cost, staff cost, utilities, equipment maintenance, operating supplies. Support to the recruitment, induction and on-going training of Chefs in the unit. The person: HACCP trained and degree or certificate in Culinary arts. Previous experience as a Sous Chef in a high volume environment. Ability to multitask and work under pressure. Knowledge of best cooking practices.
